“…For Zn, Fe, Cu, Mn, Se and Co determination, mineralization of milk samples (n 5 112) was obtained modifying the method reported by Fantuz et al (2012). Optimized digestion of thawed milk samples was carried out by placing 1 ml of milk sampled in a Teflon digestion vessel, followed by 3 ml of HNO 3 (65%).…”

“…The high sodium values might be attributed to multiple additions of sodium chloride during the cheese production and to the long ripening time. Furthermore, the sodium content in donkeys' milk is about two times higher in comparison to sodium content found in caprine or bovine milk (Soliman 2005;Fantuz et al 2012). The cheese in this study could be characterized as rich in magnesium and potassium, since determinated values of these minerals (Table 1) were significantly higher than maximum values reported for other types of cheese including hard cheeses made from bovine or caprine milk (Gambelli et al 1999).…”

“…The quantity of milk minerals including trace elements depends on a number of factors such as stage of lactation, feeding programs, genetic characteristics and environmental conditions (Gambelli et al 1999;Fantuz et al 2012). Moreover, mineral content in dairy products is also influenced by applied technological treatments.…”

“…Several studies conducted on donkey milk in terms of composition emphasized the lipid content, characterized by a high occurrence of essential fatty acids, with special importance for the diet of infants with Cow Milk Protein Allergy [42], and also the content of essential elements, which emphasize balanced contents of both macro-elements K, P, Ca, Mg, Na, and micro-elements, Cu, Zn, Ni, Cd, Fe [17,43,44].…”
