(2012) Chemical composition and fatty acid profile of fillets from farmed and wild common carp were assessed in the course of four seasons. Ten wild and ten0 farmed fish were collected in the middle month of each season (except summer due to unavailability of wild fish) during the year. Lipid and protein contents of the samples decreased from summer to spring (protein: 17.6 ± 0.3-15.9 ± 1.6; 18.2 ± 0.1-17.9 ± 1.4%, in the farmed and wild carp samples, lipid (5.1 ± 0.2-1.5 ± 0.5; 3.8 ± 0.6-2.8 ± 0.9%, respectively; p > 0.05), moisture content of both samples increased in this period (76.7 ± 1.4-81.4 ± 0.4, 75.5 ± 0.6-78.5 ± 0.2 in the farmed and wild carp, respectively). Protein content of wild carp fillet was higher (17.7 ± 0.8% protein vs. and 16.2 ± 1.2%) and moisture content was lower than those of the farmed counterparts (77.65 ± 0.6 vs. and 79.3 ± 0.1, p < 0.05). In all seasons, MUFA were higher than SFA and also the PUFA. In the wild carp fillet, PUFA was higher than SFA in winter and spring but in the farmed carp it was higher in all seasons except the spring. Palmitic, oleic, and DHA were the major SFA, MUFA, and PUFA in the wild carp fillet, respectively. In the farmed carp fillet, the major SFA and MUFA were similar to those in the wild one but linoleic acid was the major PUFA in all seasons. ω-3/ω-6 PUFA ratios in the wild carp fillet were higher than in the farmed counterparts.

As the world's fastest ongrowing sector in food production, aquaculture has remarkable priority and needs technological improvements and new candidate fish species to overcome some limitation factors. Considering these issues, this study based on determining the flesh quality in terms of nutrient and mineral element composition of two potential fish species, common dentex (Dentex dentex) and greater amberjack (Seriola dumerili), in recirculation aquaculture system (RAS). On the nutrient basis, the dry matter content of 28.82% and fillet yield with a value of 53.28% of Dentex dentex were found significantly higher than (P<0.05) Seriola dumerili. Crude protein and lipid values demonstrated slight but insignificant differences between the species. Among the macro elements of K and Mg and micro elements of Cr, Mn and Ni were noticeably higher in common dentex than greater amberjack, but Zn level was present almost double amount in amberjack (P<0.05). Lagocephalus sceleratus is one of the worst invasive species in the Mediterranean Sea migrated from Red Sea and has been spreading throughout the area. The aim of this study is focusing on the potential nutritional use of this species. The long-chain polyunsaturated fatty acids docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) are beneficial for health of humans. A good natural source of these fatty acids is seafood, especially fish. In this study, total lipid content and fatty acid composition of L. sceleratus were determined. Total lipid content of dorsal muscle was found as 1,82 %. Levels of EPA (6,08%) and DHA (15,68%) were found high. These results may mean that muscle of L. sceleratus has good nutritional value. After solving the toxicity problem of L. sceleratus, consuming this species as a food source may help to prevent the ecosystem againts this invasive species.Key words: Lagocephalus sceleratus, fish oil, omega-3 polyunsaturated fatty acids, fatty acid composition. Bu çalışmanın amacı, bu türün beslenme açısından olası kullanılabilirliğini belirlemektir. Uzun zincirli aşırı doymamış yağ asitleri; docosahexaenoic asit (DHA) ve eicosapentaenoic asit (EPA) insan sağlığı için faydalıdır. Bu yağ asitlerinin en iyi doğal kaynağı başlıca balık olmak üzere deniz ürünleridir. Bu çalışmada L. sceleratus'un toplam lipid miktarı ve yağ asidi bileşimi tespit edilmiştir. Dorsal kasta toplam lipid miktarı %1,82 olarak belirlenmiştir. EPA (%6,08) ve DHA (%15,68) yüzdeleri yüksek bulunmuştur. Elde edilen sonuçlar, L. sceleratus'un iyi bir besin değerine sahip olduğu anlamına gelebileceğini göstermiştir. L. sceleratus'un zehir etkisinin giderilmesinden sonra, bu türün besin maddesi olarak tüketilmesi, ekosistemi bu istilacı türden korumak konusunda yardımcı olabilir.Anahtar kelimeler: Lagocephalus sceleratus, balık yağı, omega-3 aşırı doymamış yağ asitleri, yağ asidi bileşimi.
