“…The α-amylase activity was determined colorimetrically by measuring the amount of maltose released (Biesiot & Capuzzo, 1990) with modifications (Albanesi, Radonic, et al, 2021). The reaction started with the addition of the corresponding sample to the reaction mixture containing the substrate starch (15 mg mL À1 ) in 50 mM phosphate buffer (pH 7.4) at 30 C. After 15 min of incubation, the reaction was stopped by adding 300 μL of the dinitrosalicylic acid reagent (DNS) (Miller, 1959), and the resultant mixture was maintained at 100 C for 10 min.…”
