Es wird die Wirkung von Diäten mit einem Gehalt von 80% Saccharose, Fructose bzw. Stärke auf den Stoffwechsel der Ratte untersucht. Im Vergleich zu den Kontrolltieren vermindert sich dabei der Stickstoffgehalt der Muskeln. Der DNS‐Gehalt in der Leber ist bei der Saccharose‐ und Fructose‐Gruppe. signifikant niedriger als in der Stärke gruppe bzw. bei den Kontrollen. Der Blutzuckerspiegel bleibt unverändert, das Leberglykogen ist am 20. Versuchstag signifikant höher als am 10. bzw. am 30. Tag, unabhängig von der Art des Kohlenhydrates. Der Cholesterinspiegel im Serum wird weder von der Art des Kohlenhydrates noch von der Dauer der Verabreichung beeinflußt. Im Niveau der Serumgesamtlipide tritt eine allmähliche Verminderung ein. 24std. Hungern verursachen bei den 30 Tage unter der Kohlenhydratdiät gehaltenen Tieren eine signifikante Erhöhung im Gesamtlipidspiegel — im Gegensatz zu den Kontrollen, bei denen sich eine signifikante Verminderung manifestiert. Einseitige Kohlenhydraternährung führt zu kleinen Abweichungen im Stoffwechsel der grundlegend wichtigen Nährstoffe.
