Lipoproteide biologische Bedeutung EiweiShydrolyse, enzymatisch Die Verdauung der lipoproteidischen Komplexe von Albumin rnit den Hydroxyketoderivaten der Lipoperoxydation von Fettsauren wird untersucht. Der Komplex wird durch Erhitzen einer Mischung von Albumin mit Hydroxyketooctadecansaure wahrend 2 h auf 130 OC hergestellt. Es mlrd seine verschlechterte enzymatische Hydrolyse im Magen nachgewiesen; in den anderen Abschnitten des Verdauungstraktes wird der Komplex recht gut verdaut und venvertet. Eine Beeinflussung des Ernahrungswertes der EiweiBkomponcnte des Komplexes tritt nicht in Erscheinung. Xach Mitt. 3 dieser lieihe [I] wird die enzymatische Hydrolyse des lipoproteidischen Komplexes von Albumin rnit Hydroxyketooctadecansaure in vitro durch die gebundene Fettkomponente inhibiert [2], und die an EiweiB gebundenen oxydierten Lipide werden nur teilweise abgespaiten [3]. Die verschlechterte Verdaulichkeit konnte den herabgesetzten Ernahrungswert [4] erklaren. Hierzu ist aufzuklaren, wie die in vitro gewonnenen Ergebnisse rnit denen in vivo korrespondieren. Zu diesem Zweck wird die Verdaulichkeit des Komplexes aus .\lbumin und Hydroxyketooctadecansaure im Verdauungstrakt der Ratte untersucht. Versuchsteil Material Eialbumin war ein Erzeugnis von Difco Laboratories Inc., Detroit. Hydroxyketostearinsaure wurdc durch Oxydation des Kaliumoleats (Koch-Light Laboratories Ltd.) im ncutralen Milieu durch eine Kaliumpermanganatlosung hergestellt [5]. Der Komplex ist durch Erhitzen einer Mischung von 95 Teilen Albumin und 5 Teilen Hydroxyketosaure auf 130 O C wiihrend 120 min dargestellt worden [6]. Der mit Chloroform extrahierte Komplex enthielt 3.8O6 gebundenes Fett und O,I% freies Fett. 3. Mitt. Nahrung 12, 765 (1968).

Changes in the nutritive value of meat under the influence of an interaction between oxidized fats and proteins were studied in model experiments. Parameters were the digestibility of protein, sensitivity of tissue against thermohydrolysis, changes in the content of essential amino acids and in the RNV coefficient of the protein. Muscle gel and tissue served as meat substrates, methyl ester of linoleic acid and its oxidation products were used as fat substrates. It has been found that reactions of the oxidation products of methyl linoleate with meat proteins lead to a crosslinking of proteins. Hexanal and hydroperoxide of the oxidized methyl linoleate influence the decrease in digestibility of muscle protein and the thermohydrolysis of the collagen. Proteins of pasteurized gels showed losses in essential amino acids, which corresponded to a lower nutritive value (determined in the RNV coefficient).
