Development of muffin with the incorporation of olive pomace flour, extra virgin olive oil and hydrolyzed soy protein

Abstract: Olive pomace flour, extra virgin olive oil and hydrolyzed soy protein are ingredients rich in compounds with beneficial health properties, such as phenolic compounds, dietary fiber, amino acids and fatty acids.
