Development of a Restructured Protein Based on Low Cost Legumes

Abstract: The aim of this research was to elaborate a vegetable restructured protein with low cost leguminous plants, using cowpea (Vigna unguiculata L.), pea (Pisum sativum L.) and lentil (Lens culinaris Medik.).
