Abstract:The influence of shear rate and concentration on the viscosity of solutions of native potato starch in water was investigated. The concentration dependence of viscosity was expressed by the Huggins equation with shear rate independent intrinsic viscosity. On the other hand the Huggins parameter is strongly influenced by the shear rate and decreases with the reciprocal square root of increasing shear rate in the range from 50.1/s to 1000‐1/s.

“…Intrinsic viscosity measurement was based on the methods described in Buksa et al (2012), Heitmann and Mersmann (1995), Richter et al (1968). 140 mg of the arabinoxylan sample was dissolved in 14 mL DMSO at 100°C for 16 h and centrifuged (2000Âg, 15 min).…”

“…The intrinsic viscosity can be obtained by measuring specific viscosities at different concentrations at the same shear-rate, and extrapolating the course of specific viscosity to infinite dilution (Heitmann & Mersmann, 1995). The intrinsic viscosity [g] is, therefore, obtained by extrapolating data to zero concentration by using a linear regression, which will be called the graphic double-extrapolation procedure (GDEP) in this study.…”

“…(5) can be used in principle for the description of non-Newtonian polymer solutions. He found from his experimental data that the intrinsic viscosity [Z] is not a function of the shear rate ǵ and the Huggins parameter K H follows a power law dependence on the shear rate: (6) According to Heitmann [3] both plots for the determination of the intrinsic viscosity [Z] and the Huggins parameter K H are presented in Fig. 1.…”
