Bacterial cellulose films were combined with glycerol and chitosan to improve the UV-barrier and mechanical properties. In part 1, the moisture content and mechanical properties (tensile and puncture properties) were analysed by response surface methodology. The calculated values of the mechanical properties were in the range of 1.23-39.28 MPa for tensile strength, 2.28-25.34% for percentage of elongation, 11.72-1579.59 MPa for Young's modulus, 0.22-1.92 MJ/m 3 for toughness, 43.74-1067.35 g for burst strength and 0.39-3.12 mm for distance to burst. In general, a plasticizing and a reinforcing effect on the bacterial cellulose films was observed by glycerol and chitosan addition. Glycerol provided adhesive properties, which can be an advantage for application on foods, such as fruit or vegetables, as a wrapping material.Películas con protección UV de celulosa bacteriana, glicerol y quitosano. Parte 1: Contenido de humedad de equilibrio y propiedades mecánicas RESUMEN Se combinaron películas de celulosa bacteriana con glicerol y quitosano para mejorar las propiedades de barrera a la radiación UV y las propiedades mecánicas. En la parte 1, se analizaron el contenido de humedad y las propiedades mecánicas (propiedades de tracción y punción) mediante la metodología de superficie de respuesta. Los valores calculados de las propiedades mecánicas estuvieron en el rango de 1.23-39.28 MPa para resistencia a la tracción, 2.28-25.34% para porcentaje de alargamiento, 11.72-1579.59 MPa para módulo de Young, 0.22-1.92 MJ/m 3 para tenacidad, 43.74-1067.35 g para resistencia a la punción y 0.39-3.12 mm para la elasticidad de punción. En general, se observó un efecto plastificante y reforzante sobre las películas de celulosa bacteriana mediante la adición de glicerol y quitosano. El glicerol proporcionó propiedades adhesivas, que pueden ser una ventaja para su aplicación en alimentos, como frutas o verduras, como material de envoltura.

The diversity of marine biomasses is a set of exploitable and renewable resources with application in several sectors. In this context, a co-culture based on three protease-producing bacterial isolates namely; Aeribacillus pallidus VP3, Lysinibacillus fusiformis C250R , and Anoxybacillus kamchatkensis M1V strains, was carried out in a medium based on the invasive blue crab Portunus segnis bio-waste. Optimization of proteases production was performed using a central composite design (CCD). The highest level of proteases production obtained was 8,809 U/mL in a medium comprising 75 g/L of Portunus segnis by-product powder (Pspp ). The recovered protein hydrolysate (P Hyd ) was found to be active towards radical scavenging power, and against angiotensin I-converting enzyme (ACE). The extraction efficiency of the blue crab chitin (BC) was achieved with a yield of 32%. Afterward, chitosan was prepared through chitin N -deacetylation with a yield of 52%, leading to an acetylation degree (AD) of 19% and solubility of 90%. The spectrum of chitin and chitosan were depicted by Fourier-transform infrared spectroscopy (FTIR). The biological value of Pspp and its obtained derivates were evidenced via accredited protocols. These data constitute a roadmap towards a circular and sustainable bio-economic strategy for a clean transformation of a recalcitrant waste to bio-based products.

Bacterial cellulose films synthesized by Komagataeibacter xylinus were combined with glycerol and chitosan to obtain composite films with improved UV-barrier. In part 2, the interaction among the compounds was analyzed by scanning electron microscopy, UV-Vis and FT-IR spectra, thermogravimetry, and differential scanning calorimetry. The water permeability, water solubility and water retention capacity were analyzed by response surface methodology. The optical properties indicated that glycerol and chitosan improved the UV-barrier properties, obtaining average transmittance values in the UV regions below 5.15%. This fact opens multiple possibilities for applications in foods and products sensitive to sunlight radiation. Hence, these properties would facilitate the application of BC-glycerol-chitosan films on fresh food, with high moisture content and susceptible to oxidation by the sunlight radiation. In addition, the thermal properties of the films showed that they could be applied in heat-treated foods at temperatures until 135°C.Películas con protección UV de celulosa bacteriana, glicerol y quitosano. Parte 2: Estructura, permeabilidad al vapor de agua, propiedades espectrales y térmicas RESUMEN Las películas de celulosa bacteriana sintetizadas por Komagataeibacter xylinus se combinaron con glicerol y quitosano para obtener películas compuestas con propiedades de barrera contra la radiación UV mejoradas. En la parte 2, la interacción entre los compuestos se analizó mediante microscopía electrónica de barrido, espectros UV-Vis y FT-IR, termogravimetría y calorimetría diferencial de barrido. La permeabilidad al vapor de agua, la solubilidad en agua y la capacidad de retención de agua se analizaron mediante la metodología de superficie de respuesta. Las propiedades ópticas indicaron que el glicerol y el quitosano mejoraron las propiedades de barrera a los rayos UV, obteniendo valores de transmitancia promedio en las regiones UV por debajo de 5,15%. Este hecho abre múltiples posibilidades de aplicación en alimentos y productos sensibles a la radiación solar. Por tanto, estas propiedades facilitarían la aplicación de películas de BC-glicerolquitosano sobre alimentos frescos, con alto contenido de humedad y susceptibles de oxidación por la radiación solar. Además, las propiedades térmicas de las películas mostraron que podrían aplicarse con alimentos tratados térmicamente a temperaturas de hasta 135°C.
