This work presents a revision of the main applications of capillary electromigration (CE) methods in food analysis and Foodomics. Papers that were published during the period March 2021 to March 2023 are included. The work shows the multiple CE methods that have been developed and applied to analyze different types of molecules in foods and beverages. Namely, CE methods have been applied to analyze amino acids, biogenic amines, heterocyclic amines, peptides, proteins, phenols, polyphenols, pigments, lipids, carbohydrates, vitamins, DNAs, contaminants, toxins, pesticides, additives, residues, small organic and inorganic compounds, and other minor compounds. In addition, new CE procedures to perform chiral separation and for evaluating the effects of food processing as well as the last developments of microchip CE and new applications in Foodomics will be also discussed. The new procedures of CE to investigate food quality and safety, nutritional value, storage, and bioactivity are also included in the present review work.

Formaldehyde Sensing Using Tapered U-Shape Plastic Optical Fiber Coated With Zinc Oxide Nanorods

Continuous exposure to formaldehyde may cause injury to the central nervous, respiratory, blood, and immunological systems. Tapered U-shape plastic optical fiber (POF) coated with zinc oxide nanorods was evaluated at wavelength of 645 nm for formaldehyde vapor sensing within a concentration range from 5% to 20%. The tapered POF with 500 µm waist diameter was prepared using chemical etching technique. Zinc oxide nanorods were synthesized using hydrothermal method and growth for 12 hours on the tapered POF. The proposed sensor exhibited a good response to formaldehyde concentration ranging from 5% to 20% with sensitivity and linearity measured to be 0.00543V/% and 98.58%, respectively. Excellent measurement stability was observed when the concentrations from 5% and above are maintain over a 600 second period. Highest difference voltage was produced by 0.0958V due to the more scattering effect of ZnO nanorods at 20% of formaldehyde concentration. This proposed sensor might be also used to detect air pollution produced not just by formaldehyde vapor, but also by other dangerous or poisonous vapors or gases.

Identification of β-aspartic semialdehyde and homocysteine as major reaction products of riboflavin-sensitized photooxidation of peptide-bound methionine

Methionine is an essential amino acid for mammals and it is limiting for monogastric animals. It can be oxidized easily by UV light. This could influence the bioaccessibility and bioavailability of methionine. In this work, the photosensitized degradation of peptide-bound methionine in the presence of riboflavin was investigated in a model system. Capillary electrophoresis was employed to analyze the time course of the degradation. The products were identified by liquid chromatography coupled to mass spectrometry (LC–MS/MS). Benzoyl methionine was degraded by 50% during UV irradiation in the presence of riboflavin after 5.0 min with 10 mol% riboflavin and 6.4 min with 3 mol% riboflavin. Homocysteine (16–20 mol%) and β-aspartic semialdehyde (ca. 30 mol%) were found as major degradation products next to methionine sulfoxide (ca. 25 mol%). A smaller molar ratio of riboflavin led to a higher formation of aspartic semialdehyde. The formation of homocysteine was paralleled by the formation of formaldehyde. Furthermore, the experiment was transferred to small peptides, which showed the analogous degradation products of peptide-bound methionine.
