Determination of Antioxidant Activity and Characterization of Antioxidant Phenolics in the Plum Vinegar Extract of Cherry Blossom (Prunus lannesiana)

Abstract: Sakura-cha (salted cherry blossom tea) is a Japanese tea that is traditionally served at celebrations such as wedding ceremonies. The production of Sakura-cha includes the immersion of cherry blossom flowers in Japanese plum vinegar, and through this process, the byproduct (plum vinegar extract of cherry blossom) is obtained. In this study, the antioxidant activity of the plum vinegar extract of cherry blossom was examined. The plum vinegar extract of cherry blossom had a greater superoxide anion scavenging ac… Show more

“…Free radicals are also involved in the defense system; phagocytes release them to destroy pathogenic microbes [33, 34]. They also participate in cellular signaling systems [29, 31, 32, 35] and seem to play a role in the regulation of insulin receptor kinase activity [33] and in the apoptosis of defective cells [36, 37]. In summary, free radicals at low/moderate levels are essential for optimal human health.…”

“…This plum vinegar extract of cherry blossom was reported to have significant superoxide anion scavenging activity. Analysis of the extract indicated presence of cyanidin‐3‐glucoside, cyanidin‐3‐rutinoside, and caffeic acid as the most potent antioxidant components (Matsuura and others ).…”

“…4 Though there are no direct evidences to the said anti-microbial and anti-bacterial properties of the sakuraleaves, few researches on the antioxidant activity of Prunus species are available. [5][6][7][8] The reason behind the use of the leaves of the sakura tree, in particular the double cherry blossom leaves, for edible use is thought to lie in its numerous metabolites, including the presence of isoroflavone purnetin, its glycoside plunnetrin, flavonoid isoquercitrin, and merylose side of coumarin glycoside; and there are some related literature available from flowers and leaves. 7,9,10 These compounds have been reported to have sedation, antitussive, expectorant, insomnia, mental stability, and relaxing effects.…”
