Determination of Amino Acid Composition of Broсcoli Cabbage Protein

Abstract: A wide range of fresh fruits and vegetables grown in different geographical areas and represented in international trade networks has changed the consumers' approaches to their choice. The determining criterion of choice is the biological value of plant raw materials, is determined by the content of amino acids, vitamins, mineral elements, β-carotene, which play a significant role in ensuring the functioning of the human body. The chemical composition of fruits and vegetables is highly variable and depends on … Show more

“…Consumption of broccoli provides 5-6% of a person's daily need for proteins, the digestibility of which reaches 80% (Belіnska & Levytska, 2016;Kryachko et al, 2017). Research on Monaco F1, Parthenon, Belstar F1 and Quinta F1 morphotypes (Belinska et al, 2018).proved that the protein of broccoli cabbage contains a significant amount of essential amino acids, such as lysine, leucine and tryptophan, which indicates its high biological value. Leucine in the human body is responsible for protein synthesis, tissue regeneration, and nitrogen monoxide metabolism, and during hematopoiesis, its deficiency leads to a quantitative decrease in erythrocytes, and therefore in the level of hemoglobin, which is a blood plasma buffer (Pedroso et al, 2015).…”
