Determinants of food preparation and hygiene practices among caregivers of children under two in Western Kenya: a formative research study

Abstract: Introduction Diarrhea is a leading cause of child morbidity and mortality worldwide and is linked to early childhood stunting. Food contamination from improper preparation and hygiene practices is an important transmission pathway for exposure to enteric pathogens. Understanding the barriers and facilitators to hygienic food preparation can inform interventions to improve food hygiene. We explored food preparation and hygiene determinants including food-related handwashing habits, meal preparat… Show more

“…Both theoretical frameworks for behaviour change in handwashing ( 21 , 23 ) and empirical evidence ( 12 , 13 , 22 , 73 , 77 ) indicate that multifaceted interventions that enhance enablers and overcome barriers are needed to create sustained change in hand hygiene behaviors. However, a commitment to routine washing hands with soap cannot be enacted without access to soap and clean water.…”

“…Families with good sanitation will affect infectious diseases that are associated with stunting events. The occurrence of infectious diseases in a child can be caused by various factors such as environmental sanitation, access, and utilization of maternal hygiene and hygienic behavior, namely the habit of mothers in hand washing (Ogutu et al, 2022). This was in line with the (Lin et al, 2022), which gains that a healthy and clean environment will reduce the incidence of infection, further reducing the incidence of disease that ultimately affects the increase in child nutrition status.…”

“…Hence, caregivers are role models for children and, therefore, must be the first to follow good hygiene practices. Yet, a recent review identified that a lack of knowledge of critical times for handwashing, a lack of importance of washing some food before eating and a lack of resources (such as water and soap) were part of the boundaries among caregivers associated with poorer children hygiene practices [34]. In this context, and in terms of unhygienic environments, WASH interventions need to remain in place whilst also addressing important vectors such as soil, faecal contamination, and infant food, as these may be pathways for microbes' ingestion, which is linked to poor ECD [6].…”
