Determinação de tricotecenos em cerveja e avaliação de incidência no produto comercializado no Rio Grande do Sul

Abstract: -INTRODUÇÃOOs tricotecenos são micotoxinas constituídas por anéis tricotecanos que apresentam uma ligação dupla entre os carbonos 9 e 10 e um grupamento epóxido nas posições 12 e 13 da estrutura. A literatura relata 190 estruturas de tricotecenos que tem sido identificadas [12].
