“…O princípio dado é de que as soluções açucaradas possuem a mesma densidade e concentração ainda que seja um açúcar distinto, dessa forma classificado em duas vias cuja determinação se deu pela via de refratometria (CTC, 2011), no qual deve-se compreender que a refração ocorre pela modificação da direção de um feixe de luz ao permutar de meio, assim sendo através do ambiente para a solução líquida.
