Detection of harmful foodborne pathogens in food samples at the points of sale by MALDT-TOF MS in Egypt

Abstract: Objectives Microbes can contaminate foodstuffs resulting in foodborne illnesses. Investigating microbial hazards in foods at the point of sale with rapid tools is required to avoid foodborne illness outbreaks. The current study aimed to identify the microbial hazards in food samples collected from retail shops at sale points using MALDI-TOF MS. Results Food samples were collected from stores and supermarkets in four Delta cities (Tanta, Kutour, Kaf… Show more

“…All isolates were re-identified using Matrix-Assisted Laser Desorption/Ionization Time-of-Flight Mass Spectrometry (MALDI-TOF MS) at the species level with a log value > 2.300. Protein extraction from pure colonies of each sample was done as previously described [ 22 ]. The MALDI-TOF measurements were carried out using a Microflex LT instrument (Bruker Daltonics, Bremen, Germany), following the MALDI Biotyper manufacturer’s recommendation on the log score value of 0–3 for species identification.…”

“…Salmonella spp and fecal coliforms (E. coli, K. pneumoniae and E. aerogenes) bacteria were detected in 42% of water samples and 64% of processed sh samples. This result is in agreement with several studies which reported the isolation of E. coli, Enterobacter spp., and Citrobacter spp., and Klebsiella spp., P. aeruginosa, and Salmonella from sh products (Sha et al, 2020 andKhater et al, 2021).This was indicative of post contamination of sh product in the processing system, fecal pollution and poor quality of processed sh which is linked with the practice of inadequate hygienic measure, mishandling, improper storage and use of dirty water during processing and all unhygienic condition of the processes.…”
