Detailed Study of Furan Fatty Acids in Total Lipids and the Cholesteryl Ester Fraction of Fish Liver

Abstract: Furan fatty acids (F-acids) are valuable, bioactive minor components in lipids which are characterized by a furan moiety in the acyl chain. Here, we present a gas chromatography/mass spectrometry method operated in the selected ion monitoring mode (GC/MS-SIM) for the thorough determination of F-acid as methyl esters in fish. The method takes advantage of the molecular ion and two characteristic fragment ions and enables the unequivocal detection of >350 saturated, mono-and dienoic F-acids in four GC/MS-SIM run… Show more

“…5b). These three fragment ions can be used for the identification of triacylglycerols with 9M5 (similarly, triacylglycerols with other FuFA can be identified by characteristic low mass fragment ions [Wendlinger et al, ]). In the high mass range, triacylglycerols (with conventional fatty acids, no FuFA) do not form molecular ions but characteristic [M‐RCOO] + fragment ions (Fig.…”

“…FuFAs were identified by means of their mass spectra as reported elsewhere [15,41,42] Table 1). Similar abundance ratios of the GC/ MS-SIM ions as in 8F6-ME were requested for the assignment of other N-FuFAs (tolerated absolute deviation ± 6%, Table 1).…”

“…Measurements were performed using a 6890/5973 system operated under conditions described elsewhere, 31 except for the oven programme which was the same as for the GC/ECNI-MS. The measurements were performed in full scan mode (m/z 50 to 650).…”
