Designing optimized food intake patterns for Korean adults using linear programming (I): analysis of data from the 2010~2014 Korea National Health and Nutrition Examination Survey

Abstract: Purpose: The aim of this study was to design optimized food intake patterns that meet the nutritional recommendations with minimal changes from the current food intake patterns among Korean adults using linear programming. Methods: Data of a one day 24-hour dietary recall from the 2010~2014 Korea National Health and Nutrition Survey were used to quantify the food items that Korean adults usually consumed. These food items were categorized into seven groups and 24 subgroups. The mean intakes and intake distribu… Show more

“…The most relevant to the present study is the work by Asano ( 30 ) that focused on nutrient optimization in Korean meals. Asano studied the food intake patterns of Koreans and formed a healthy Korean diet based on the widely used formulation given by equation (1).…”

“…Cabbage is an important vegetable due to the distinguishing crisp texture and richness in the nutrient composition with various antioxidants and phytochemicals (Moreb et al, 2020;Li et al, 2021). Also, cabbage is in particular importance in Korea because it is the primary ingredient of "kimchi"-a traditional salted and fermented side dish (Asano et al, 2018). However, most of the cabbage subspecies or varieties hydroponically studied are sensitive to NH + 4 , such as Chinese cabbage var.…”

“…A wide variety of crops, such as cereals (e.g., corn, wheat, and barley) and vegetables (e.g., cabbage and radish), are cultivated in upland fields in Korea [8]. Cabbage in particular is an essential vegetable in Korea, as it is a main ingredient of kimchi: a traditional side dish of salted and fermented vegetables [8,9]. Over the past few decades, farmers have applied agronomic practices, such as fertilization, irrigation, and tillage to improve crop yield.…”
