Der Zusammenhang von Kalium‐ und Kohlehydratstoffwechsel bei der Hefe

Abstract: 1. Zwischen Kohlehydratstoffwechsel und Kaliumstoffwechsel der Hefezelle besteht ein enger Zusammenhang. In der ersten Phase der Gärung, bei der Glucose‐Aufnahme und Polysaccharidbildung, nimmt 1 g Hefe mit 10 mg Glucose etwa 0,5 mg Kalium auf. Wenn nach etwa 10 Minuten die Kohlendioxydbildung beginnt, wird Kalium wieder abgegeben, so lange die Gärung dauert.
