Decreased glycation and structural protection properties of γ-glutamyl-S-allyl-cysteine peptide isolated from fresh garlic scales (Allium sativumL.)

Abstract: The antiglycative effect of γ-glutamyl-S-allyl-cysteine (GSAC) peptide isolated from fresh garlic scales was investigated in the bovine serum albumin (BSA)/glucose system. GSAC inhibited the increase of fluorescence intensity at about 440 nm in a concentration-dependent manner and reduced reacted free lysine side chains by 10.9%, 24.7% and 37.7%, as the GSAC concentrations increased from 0.1 to 2.5 mg mL(-1). Glycation-specific decline in BSA α-helix content (from 61.3% to 55.6%) and increase in β-sheet (from … Show more

“…Allium plants, some of which have medicinal properties, such as anti-cancer properties, lipid level, blood pressure, blood cholesterol-level lowering effects, anti-glycative effect and an antioxidant capacity (Fenwick & Hanley 1985;Sendl et al 1992;Agusti 1996;Lawson 1998;Yeh and Liu 2001;Yanagita et al 2003;Tan et al 2015). In recent years, there has been particular interest in the antioxidant activity because of the relationship between oxidative stress and pathologies (e.g.…”

“…Recently, confirmative data were obtained in the BSA/glucose system testing the antiglycative effects of the SAC precursor, gglutamyl-S-allyl-cysteine (GSAC) (Tan et al, 2015). BSA glycation was found decreased by GSAC in a concentration-dependent manner and suppressed protein crosslinking to form polymers while exhibited free radical scavenging and metal chelating activities.…”
