Dates palm (Phoenix dactylifera L.) Fruits: Nutritional Properties and Potential Applications

Abstract: Date palm is one of the oldest fruit trees on Earth and has been closely associated with human life in the Middle East since ancient times, including Saudi Arabia, which is the parent country of date palm, the second largest producer of date fruit in the world and the ranks of developed countries in the cultivation and production of dates of all kinds. “…Date Syrup, also known as date molasses or date honey, is a thick, sweet syrup made from boiled and reduced dates. This substance is a natural source rich in sugars, vitamins, antioxidants, and minerals [13]. Recently, interest in the use of natural products such as date molasses in the "green synthesis" of nanoparticles and other materials has increased significantly.…”

“…Due to their high and balanced nutritional profile, date fruits are a good candidate for enhancing human health and food security. These fruits contain high amounts of multivitamins, minerals, phytochemicals, dietary fiber, carbohydrates, and protein, demonstrating great nutritional value [7]. As a result, there is a growing interest in developing food products that use dates as a rich source of nutrients.…”

“…Therefore, it is used as fodder for animals or is destroyed and is not used economically [3]. In general, the amount of wastage in dates reaches 20-30% of the amount of production in the form of non-marketable dates, or the surplus production of previous years, which requires the introduction of surplus dates from production or second-and third-class dates, which are sold at low prices in manufacturing industries, including the natural date molasses industry [4]. Lowquality dates (second and third-grade dates) contain a high percentage of sugars 68-78%, which makes them suitable for use in the food industry [5].…”
