Abstract:This review provides the current laboratory criteria for the detection and evaluation of the possible causes of alteration of non‐concentrated industrial derivatives of tomatoes (peeled tomatoes, pulps, purees, sauces, and fillets), packaged in coated or uncoated tinplate cans.
