This study focused on the identification of the filamentous fungi associated with soapstone samples exposed to outdoor conditions and the biocidal effect of gamma radiations on isolated fungal populations in Minas Gerais State in Brazil. Two soapstone blocks were placed outdoors under tropical environmental conditions for 12 months. A total of 9 filamentous fungal populations were identified on their surfaces, namely Acremomium (cf.) alternatum, Alternaria alternata, Aspergillus fumigatus, Calcarisporium (cf.) arbuscula, Cladosporium cladosporioides, Curvularia lunata, Epicoccum nigrum, Fusarium equiseti and Penicillium citrinum. The gamma radiation assay was then carried out as a test of biocidal action by exposing all fungal populations to the ionizing radiation. The results showed that only the C. cladosporioides species was resistant to this biocidal agent, since it was able to increase its population post exposure. Scanning electron microscopy images identified the microbial colonization on the soapstone blocks and the stone elementar composition was analyzed by energy dispersive X-ray spectrometry. After treatment, there was no structural and aesthetic alteration in the soapstone samples, and evidencing that gamma radiation can be used as a biocidal agent. However, the resistance of the black fungal population indicates caution in the choice of gamma irradiation as biocidal treatment.

Food contamination is one of the major problems in food distribution. Microorganisms and their metabolites are the most common food contaminants. This review consolidates the reported food contamination cases in the Republic of Serbia. Mycotoxins were stated as the most common contaminants in various foods. Among them mycotoxins like zearalenone, aflatoxins, fumonisins, and deoxynivalenol were the most frequently detected. Also, the contamination caused by the presence of various microorganisms like L. monocytogenes, E. coli, Salmonella spp. and S. aureus was reported in high frequency. The microbial contamination was usually detected in meat and dairy products. Although heavy metals were detected in some products, in most cases their concentrations were in accordance with the legislation. A higher level of Pb and Hg was stated only in a few samples of tea, milk and fish. The constant analysis, control and prevention are needed at all levels of the production in order to compile the safety requirements and international legislation.

Effect of radiation and/or traditional processings on antinutrients and HCl extractability of calcium, phosphorus and iron of sorghum cultivars

Whole flours of sorghum cultivars Dabar, WadAhmed and Karamaka were irradiated and then fermented and/or cooked. Tannin and phytic acid contents were assayed for all treatments. Traditional processings (fermentation and cooking) were significantly (P ≥0.05) decreased tannin and phytate of the cultivars and further reduction was observed when the flour was irradiated before processing for all cultivars. Radiation process alone had no great effect on tannin and phytate contents but when followed by traditional processing the reduction level was significant (P ≥0.05) for all cultivars. Radiation alone had no significant (P ≥0.05) effect in increment of total and extractable calcium (Ca). However, radiation followed by fermentation and/or cooking significantly (P ≥ 0.05) increased both total and extractable Ca. Total phosphorus (P) was not significantly (P ≥0.05) increased at all levels of radiation and/or processing but the extractable P was increased. Total iron (Fe) was not affected by radiation and/or processings but the extractable Fe was increased significantly (P ≥0.05) with the radiation dose for all cultivars.
