Content of Toxic Elements in 12 Groups of Rice Products Available on Polish Market: Human Health Risk Assessment

Abstract: Background: Rice is one of the most commonly consumed grains. It could be a good source of nutrients in a diet, but its consumption could also contribute to exposure to toxic elements. All rice products available on the Polish market are imported, which may pose a particular concern as to the safety of their consumption. The aim of our study was to estimate the content of As, Cd, Pb, and Hg in rice products and to assess the health risk indicators related to exposure to toxic elements consumed with rice produc… Show more

“…The determination of mercury concentration was performed directly in homogenized dried samples (0.05–0.1 g). To determine the concentration of Pb, Cd and As, powdered mushrooms (0.2–0.3 g) were mineralized with concentrated (69%) nitric acid (Tracepur, Merck, Darmstadt, Germany), using a closed-loop microwave system (Speedwave, Berghof, Königssee Germany) according to procedure described previously [ 31 ]. The mineralisation process included four steps with different temperatures (1 st – 170°C, 2 nd – 190°C, 3 th – 210°C, 4 th – 50°C) and pressure (1 st – 20 atm, 2 nd – 30 atm, 3 th – 40 atm, 4 th – 40 atm) for 10, 10, 10 and 18 min, respectively.…”

“…It is worth limiting the consumption of rice and rice products, as they are often contaminated with inorganic As. To exceed the maximum intake of As, a 3-year-old child must eat 242 g of rice cereal per day (6 portions of cereal) or 167 g of rice waffles, which is about 16.5 pieces [ 96 ].…”

“…Then, an amount of between 200 and 300 mg was weighted to polytetrafluoroethylene vessels and 4 mL spectrally pure concentrated (69%) HNO 3 was added (Merck, Darmstadt, Germany). The microwave mineralization was carried out in a close-loop system, applying the procedure described previously (Speedwave, Berghof, Germany) [ 13 ]. The digestion procedure consisted of 3 steps.…”
