Content of macronutrients in selected species of edible mushrooms

Abstract: Na i S w grzybach pochodzących z upraw celowych-pieczarce białej i brązowej (Agaricus bisporus) oraz boczniaku ostrygowatym (Pleurotus ostreatus). Grzyby zakupiono w sklepach lokalnych sieci handlowych w Siedlcach. Show more

“…In mushrooms growing in Germany, its typical content is 5-10 g/kg DM [4], while in Finland, the content is an average of 4-6.3 g/kg DM [18]; a much higher concentration was recorded in Japan, from 43-69 g/kg DM [46], whereas small levels were noted in Turkish L. scabrum, with a mean value of 3.22 g/kg DM [47]. The mushrooms we analyzed contained amounts of phosphorus that were within the range found in cultivated mushrooms: Agaricus bisporus and Pleurotus ostreatus [48,49]. Perez-Moreno and Read [24], Entry et al [50], and Andersson et al [51] showed that mycelium obtains large amounts of phosphorus from the substrate and supplies it to plants, as well as accumulates it itself in large amounts.…”

“…However, there is a lot of calcium (more than K, P, Mg and Na) in mushrooms from India [1]. The mushrooms we analyzed contained amounts of calcium that were within the range found in cultivated mushrooms: A. bisporus and P. ostreatus [48,49].…”

“…These values differ from those obtained in the current study. Karmańska & Wędzisz (2010) [ 42 ] determined the average Cu content in the B. badius from the province of Łódź at 29.2–34.1 mg/kg d.w. while Kuziemska et al (2019) [ 51 ] found 34.8 mg/kg d.w in Masovian Voivodeship, and Adamiak et al (2013) [ 51 ] reported 23.4 mg/kg d.w. in this species from Wysoczyzna Siedlecka region. Karmańska & Wędzisz (2010) [ 42 ] obtained similar contents of Cu in B. edulis : 22.0–22.9 mg/kg d.w. Also, Brzezicha-Cirocka et al (2016) [ 34 ] reported 15–70 and 6–72 mg/kg d.w. in B. edulis obtained in Morąg and on the Tarnobrzeska Plain, respectively.…”
