Consumers' perceived value of healthier eating: A SEM analysis of the internalisation of dietary norms considering perceived usefulness, subjective norms, and intrinsic motivations in Singapore

Abstract: Consumers' internalisation of social norms is at work when they make routine, healthier food choices in everyday contexts. We investigate the dynamics of this phenomenon in Singapore, where over 98% of consumer food products are imported. To study this, we propose, through a consumer perspective (n = 316) via Partial Least Squares Structural Equation Modelling (PLS-SEM), a model that establishes a positive relationship between perceived usefulness, subjective norms, and intrinsic motivations and the perceived … Show more

“…Arguably, this seems to be the most important contribution, considering the lack of literature in this domain (Prentice et al, 2020). This study also shows a significant positive correlation between PLA and subjective norms, which are commonly treated as separate predictors of behavioral intention or as moderators of other correlations in previous TPB studies (Kervenoael et al, 2020). It suggests that PLA could positively affect or reinforce subjective norms, an important manifestation of herd psychology.…”

“…PLS-SEM has been chosen because of its ability to work with a small sample size with no distributional assumption (Hair et al, 2019). Compared to the covariance-based SEM, Kervenoael et al (2020) elucidated that PLS-SEM offers greater flexibility to early-stage development types of study, which are frequently used for theory testing. Additionally, PLS-SEM has been deployed in studies of different contexts, including tourism (Mathew and Soliman, 2020), events (Tan et al, 2020c), education (Sim et al, 2020) and human resources (Tan et al, 2020a).…”

“…To a significant degree, research on technology adoption use approaches from the 1st or 2nd generations of multivariate models (e.g., multiple regression). It assumes that variables have symmetric relationships (e.g., SEM) ( De Kervenoael et al, 2021 ). Predictors, in these models, are required to be both adequate and necessary for an event to take place.…”

“…Subjective norms can be defined as perceived social pressure to engage (or not) in a behaviour and are considered as antecedents of intention (Ajzen and Madden, 1986). In the case of food choices, the desire to consider "significant others" (family, friends, relatives, work colleagues, and other reference groups; Scalco et al, 2017) when purchasing and eating organic food correlated with the intention to purchase sustainable products (Dean et al, 2008;Aertsen et al, 2009). De Kervenoael et al (2020 considered subjective norms as a function of (un)perceived barriers to purchase: they facilitate the intention to purchase healthy and sustainable products.…”
