However, GC–MS is suitable to detect non-polar and semi-polar compounds ( Baroudi, Al-Alam, Chimjarn, Delhomme, Fajloun, & Millet, 2020 ), GC–MS with derivatization and LC-MS are specifically targeted at polar and semi-polar compounds ( Proestos et al, 2006 , Sharma et al, 2018 ), meanwhile, carboxyl compounds in Chinese Baijiu are polarity diversity and exist in a low concentration, leading to a poor-coverage detection of carboxyl compounds in Chinese Baijiu ( Jia et al, 2020 , Son et al, 2018 ).
