Composition of tomato fruit. IV.—Changes in some constituents of the fruit walls during ripening

Abstract: Changes in the composition of the outer walls of glasshouse tomatoes during ripening have been studied. The fruit, mainly of the variety ' Potentate ', was carefully graded by colour into either five or six categories from mature green t o red.The content of sugars and total solids in the expressed juices increased significantly from the green t o the red stage. The nitrogen content showed little variation from the green t o the orange stage, but increased significantly on reaching the fully red condition. The … Show more

“…During ripening process, the increase of sugar content corresponds with the reduction of TA (Winsor et al, 1962). Similar study was shown in this study that showed during the ripening process, TSS was increasing and TA was decreased ( Figure 6).…”

“…Total solids and total sugars increase progressively during development and maturation (WINSOR et al, 1962a;1962b). Generally, acidity in tomatoes increases during development and reaches a maximum at the breaker stage, then decreases with further ripening (DAVIES, 1966;STEVENS, 1972).…”

“…Number of fruit/plant ranged from 168 to 37.33. [41] noted this range from 171 to 19.02. Genotype TC0131-41-12-35-38-0-0, BINA Tomato-8, V1005584 and Walter showed highest green fruit girth; BINA Tomato-8, CL170-0-2-2-0, TC0131-41-12-35-38-0-0 and T2 had larger green fruit length; highest green fruit weight was found in genotype T8; highest red fruit girth and weight was observed in TC233-9-10-4-1-28-8; genotype ROBIN CVFS F1 RS (ˣ46) showed highest red fruit length.…”
