Compliance with HACCP prerequisites in an international fast food chain

Abstract

The objective of the study was to determine the level of compliance with the prerequisites required for the implementation of the HACCP system in an international fast food chain in Trujillo -Peru. The research, product of a thesis study, was quantitative, non-experimental, cross-sectional and descriptive. Information was collected from 4 establishments of a fast food chain in the city of Trujillo, Peru. Data collection was carried out through observations and using a checklist that was designed from the GHYCAL instrument (Hygiene and quality management) adapted for the gastronomic sector. The instrument considered 7 dimensions (D1, D1, D3, D4, D5, D6 and D7), a total of 65 items and a maximum score of 325 points. For data analysis, the statistical program Statistical Package for the Social Sciences 25 (SPSS version 25) was used. The results showed that the average level of global compliance with the prerequisites of the HACCP system in the 4 establishments evaluated was 96.4%, that is, higher. Each of the 4 establishments under study obtained a compliance greater than 95%, which indicates that they have the conditions to implement HACCP in the restaurant chain.
