Comparison of Free Amino Acids Profile in Honey from Three Argentinian Regions

Abstract: The physical chemistry characteristics of honey are directly related to floral origin and, as a result, to the production region. There are some available methods that can determine the botanical or geographical origin of honey such as the free amino acids profile analysis. This paper reports data on the free amino acid composition, determined by reversed-phase high-performance liquid chromatography UV detection on 56 honey samples from three different Argentine regions, with characteristic apiarian flora. “…In our PLSDA analysis (Figure 2), some 10 amino acids contributed in the top 20 ranking of variables contributing to discrimination of honeys (see Table 1). From the literature for Argentinian honey samples from three distinct geographical regions in the same country, different sets of between 5 and 7 amino acids were used to distinguish honeys from one individual region from another (24 ). Phenylalanine appeared as a critical amino acid in all three of the groups of amino acids, while tyrosine was only included in one group.…”

“…The applied methodology allows the total separation of all amino acids and biogenic amines in the standards solutions and analysed matrices, overcoming some peak overlay obtained by several authors [8,[50][51][52] namely Asn + Ser [50,8], Gln + Thr [50], Asp + Asn [51], Glu + Gln [51] and Thr + Ala [52]. “…Although palynological studies have been carried out on Argentinean honeys there are few reports on the relationship between their botanical origin and their physicochemical properties (Naab and Torroba, 1993;Andrada, 2001;Baroni et al, 2002Baroni et al, , 2004Cometo et al, 2003;Tamame and Naab, 2003;Malacalza et al, 2005).…”
