Comparison between thermal hydrolysis and enzymatic proteolysis processes for the preparation of tilapia skin collagen hydrolysates

Abstract: Wang W., Li Z., Liu J.-Z., Wang Y.-J., Liu S.-H., Sun M. (2013): Comparison between thermal hydrolysis and enzymatic proteolysis processes for the preparation of tilapia skin collagen hydrolysates. Czech J. Food Sci., 31: 1-4The tilapia (Oreochromis niloticus) skin hydrolysate was produced by thermal or enzymatic hydrolysis processes. Several product characteristics were studied such as the average molecular weight, 2,2-diphenyl-1-picrylhydrazyl radical-scavenging activity, yield, and protein content, in order… Show more

“…The scavenging effects of TCP on DPPH free radicals were measured as described in Wang et al (2013). Briefly, 2 mL of collagen peptide samples (6~18 mg mL À1 ) was added to 2 mL of 0.1 mM DPPH in ethanol (95%).…”

“…From our study, the three kinds of CPs have fairly high protein contents reaching up to more than 85%, and the highest of them, SMG, reaches up to 95.625%. The marine hydrolysates reported previously contained total protein content at a range of 70% to 98%, at which the hydrolysate could apply as essential sources of protein (Lassoued et al, ; Pei et al, ; Wang et al, ; Xu et al, ). Furthermore, our extractive procedure is efficient, and the CPs we obtained possess high purity on peptides, as well as efficient human ingestion due to a compact molecule weight for intestine absorption, which is beneath 800 Da by MALDI‐TOF‐MS.…”

“…Kolagen dari ikan air tawar yang telah diteliti antara lain kulit ikan nila hitam (Sahubawa dan Putra 2011), ikan mas (Motowidlo et al 2008), dan nila (Wang et al 2013). Hasil ekstraksi kolagen kulit ikan patin menggunakan metode asam dan pepsin menunjukkan bahwa kolagen kulit ikan patin memiliki stabilitas thermal yang lebih baik dibanding ikan lain (Singh et al 2011).…”
