Abstract: Aim: To examine the organoleptic and microbial quality of three fish species namely African red snapper (Lutjanus agennes), Mullet (Mugil cephalus) and Catfish (Chrysichthys walkeri) smoke-dried using rubber wood (Hevea brassillensis).
