The present study investigated the black rice ethanolic extract (BREE) protective effect as natural antioxidants against oxidative stress induced by ethyl alcoholic (EA) in male rats. BREE flavonoids and phenols were determined by high performance liquid chromatography (HPLC). The study was conducted on 40 male Wistar rats weighing 170±2 g, the animals divided into 4 equal groups. The first group was given distilled water (DW) and used as a negative control (NC) group. The second group was administrated EA (6 g/kg bw/day) and used as positive control (PC) group. The other groups of rats were administrated [BREE 125 or 250 mg/kg bw + EA 6 g/kg bw/day]. Blood samples were collected after 10 days. Lipid profile, thiobarbituric acid (TBA), superoxide dismutase (SOD), glutathione (GSH) and F2-isoprostanes (F2-isoPs) were determined. The results indicate that the rats treated with EA 6 g/kg bw/day showed a significant (p≤0.05) increase in the levels of total cholesterol (TC), low density lipoprotein-cholesterol (LDL-C), TBA and F2-isoprostanes and significant (p≤0.05) decrease in highdensity lipoprotein-cholesterol (HDL-C), SOD and GSH levels. The rise in serum TC, LDL-C, TBA and F2-isoprostanes were significantly attenuated by BREE 125 or 250 mg/kg bw + EA 6 g/kg bw/day. Also, the levels of serum HDL-C, SOD and GSH in BREE 125 or 250 mg/kg bw + EA 6 g/kg bw/day groups showed a significant (p≤0.05) increase as compared to PC group. The current results ascertained the beneficial effects of BREE in controlling oxidative stress induced by ethyl alcohol in male rats.

Metabolite profile is a powerful analytical technique to identify the functional characterization of plants. In this study, the phytochemicals and secondary metabolites of lentils (Lens culinaris) were analyzed to compare the anti-oxidative activities according to the different colors. The polar metabolites, fatty acids, carotenoids, flavonoids, anthocyanins, total phenolic acids, DPPH activity were analyzed. Three kind of lentils, French green whole lentil (FG), red whole lentil (LR), and green whole lentil (LG) (ASIA SEED Co., LTD), were used for this study. Fatty acids, phytochemicals, and antioxidative components from each lentil varieties were analyzed by official methods. The contents of lutein in carotenoids were 6-9 times higher than zeaxanthin in all lentils, but were not significantly different among three varieties. The content of carotenoids in FG was lower significantly than those in the LR and LG. Myricetin and luteolin were detected in the only FG. Kaempferol and delphinidin were significantly highest in the FG. Most of the phenolic acids except coumarate were higher in FG and LG than in LR. Also antioxidant effects (EC50) were higher in FG and LG than in LR. The analyzed metabolites obtained from lentils showed distinct separation in the PCA results according to the varieties. Also, lentils showed different anti-oxidant profiles according to the colors. FG and LG showing higher contents of phytochemicals showed higher antioxidative activity than LG containing relative low contents of phytochemicals.

Pigmented rice (Oryza sativa L.) genotypes become increasingly important in the agroindustry due to their bioavailable compounds that have the ability to inhibit the formation and/or to reduce the effective concentration of reactive cell-damaging free radicals. This study aimed at determining the concentrations of free, and bound phytochemicals and their antioxidant potential (DPPH and ABTS assays) as well as the vitamin E and carotenoids contents of non-pigmented and pigmented rice genotypes. The results confirmed that the content of total phenolics and flavonoids contents, as well as the antioxidant capacity (DPPH and ABTS assays) of pigmented rice was several-fold greater than non-pigmented ones (4, 4, 3 and 5 times, respectively). Compounds in the free fraction of pigmented rice had higher antioxidant capacity relative to those in the bound form, whereas the non-pigmented rice cultivars exhibited the opposite trend. Ferulic acid was the main phenolic acid of all rice genotypes, whereas black rice contained protocatechuic and vanillic acids in higher contents than red rice and non-pigmented rice genotypes. For vitamin E (tocopherols and tocotrienols) and carotenoids (lutein, zeaxanthin and β-carotene) contents, no obvious concentration differences were observed between non-pigmented and pigmented rice, with the black rice exhibiting the highest carotenoid content. Overall, pigmented rice genotypes contain a remarkable amount of bioactive compounds with high antioxidant capacity; therefore, they have great potential as a source of bioactives for developing functional food products with improved health benefits.
