Comparative Contents of Dietary Fiber, Total Phenolics, and Minerals in Persimmons and Apples

Abstract: Dietary fibers, major phenolics, main minerals, and trace elements in persimmons and apples were analyzed and compared in order to choose a preferable fruit for an antiatherosclerotic diet. Fluorometry and atomic absorption spectrometry following microwave digestion were optimized for the determination of major phenolics and minerals. Total, soluble, and insoluble dietary fibers, total phenols, epicatechin, gallic and p-coumaric acids, and concentrations of Na, K, Mg, Ca, Fe, and Mn in whole persimmons, their … Show more

“…However, there were nonsignificant differences between the two studied fruits in their contents of copper and manganese. Gorinstein et al(2001) reported that, whole persimmon fruit contained 254, 8.22 and 9.35 mg/100g fresh weight of K, Mg and Ca, respectively. While Fe, Mn, Zn and Cu recorded 101.4, 107.1, 13.9 and 9.76 mg/100g of fresh fruit, respectively.…”

“…Main minerals and essential trace elements are very important in biological processes, and play a vital role in normal growth and development and have also been involved in prevention of some chronic diseases [Gorinstein et al 2001]. Black currants contain a rich mineral composition which may contribute to health benefits.…”

“…Though persimmon peel (PP) is rich in carotenoids and polyphenols rather than persimmon pulp [2], the peel is discarded during production of dried fruit. It has been reported that PP components have beneficial effects such as antioxidant activity [3][4][5], and tyrosinase inhibiting activity (whitening activity) [6].…”
