Comparative Analysis of Volatile Compounds between Jackfruit (<i>Artocarpus heterophyllus L.</i>) Peel and its Pulp

Abstract: In the study, the solid-phase microextraction (SPME) and gas chromatography and mass spectrometry (GC-MS) were used for identifying and analysising the volatile compounds of jackfruit (Artocarpus heterophyllus L.) fresh peel (FE) and fresh pulp (FU). The result showed that it was apparent differences of the species and quantities of volatile compounds between peel and pulp. 2,3-Butanediol, Butyrolactone, 1-Methoxy-2-propyl acetate, Butanoic acid, 3-methyl-, butyl ester, n-Amyl isovalerate, n-Hexadecanoic acid … Show more

“…The fruits were kept at room temperature (28 ± 3°C, 70%–75% RH) for 5–6 days until ripe. Fruits were washed, carefully cut, seeds removed from the bulbs, and the jackfruit pulp was transferred to gas‐impermeable polyethylene bags (water vapor permeability ≤1.0 E‐13 g/Pa·s·m 2 ), sealed with vacuum, and frozen at −20°C until analysis. Six fruits were used for the study 25 …”

“…In addition, other studies have reported that jackfruit contains flavonoids (catechin, rutin and myricetin), phenolic acids (gallic acid, ferulic acid and tannic acid), phytosterols (betasitosterol, lanosterol, stigmasterol and campesterol), essential fatty acids (linoleic acid and linolenic acid) and essential amino acids (valine, leucine and lysine), which makes it an excellent fruit for consumers (Sharma et al, 2015;Peng et al, 2013;Singh et al, 2015;Shafiq et al, 2017).…”
