Comparative Analysis of Nutritional Components of Edible Insects Registered as Novel Foods

Abstract: In this study, the nutritional components of Tenebrio molitor, Protaetia brevitarsis, and Allomyrina dichotoma larvae, which have been registered as novel foods, were analyzed and compared to expand the diversity of selection criteria for edible insects. The contents of crude components, amino acids, fatty acids, and minerals were analyzed. According to the results of comparative analysis of edible insects, crude proteins were abundant in all three kinds of insects. The content of crude fat was the highest in … Show more

“…They were widely used in the production of foam insulation and packaging materials ( Matyja et al, 2020 ; Peng et al, 2019 ). EPS materials are primarily manufactured for one-time use, which increases the accumulation of EPS waste due to the contrasting patterns of high durability and short consumption, leading to significant environmental problems ( Barnes et al, 2009 ; Kale et al, 2015 ). Currently, most EPS waste is disposed of in landfills or incinerated.…”

“…Thus, freeze-drying produced cricket powder with a higher capacity for rehydration than that produced by hot air-drying. This might be attributable to smaller particle size resulting from the grinding of frozen crickets or to changes in the surface structures of hot air-dried crickets due to high temperatures (Baek et al 2017;Kim et al 2012;Kim et al 2013;Lee & Kim 2011;Onayemi & Potter 1974).…”

“…굼벵이(Protaetia brevitarsis)는 조단백질 57.86%, 올레익산 61.10%, 철분 174.6 mg을 함유하고 있다. Baek et al (2017)은 세 포 분화, 근육의 강화 및 간 질환의 예방에 도움이 된다고 보고하였 다. 유엔식량농업기구(FAO)에서는 지구의 온난화로 인한 식량난을 해 결하기 위해 곤충식품을 섭취할 것을 제안하였다 (van Huis et al, 2013).…”
