Abstract:The paper investigated the phytochemical content and antioxidant activity of poplar buds (Populus nigra L.), turmeric (Curcuma longa) and ginger (Zingiber officinale) extracts. Proximate composition, total polyphenols, ß-carotene, vitamin E, minerals and antioxidant capacity were tested for all selected plants.
