Abstract:Eugenol oxidase (EUGO), a member of the vanillyl alcohol oxidase family, catalyzes the oxidative reaction of vanillyl alcohol to vanillin. This compound is responsible for the vanilla aroma and is widely used as a flavoring agent in food, cosmetics, and pharmaceuticals.
