Chemistry and Functionality of Bioactive Compounds Present in Persimmon

Abstract: Extensive research has related the consumption of persimmon with the reduced risk of various diseases and particularly highlighted the presence of bioactive phenolic compounds for their therapeutic properties. Major phenolic compounds present in persimmon are ferulic acid,p-coumaric acid, and gallic acid.β-Cryptoxanthin, lycopene,β-carotene, zeaxanthin, and lutein are important carotenoids having antioxidant potential. They are important to prevent oxidation of low-density lipoproteins, safeguard beta cells of… Show more

“…Ascorbic acid content was ranged from 9.43 to 43.17 mg /100g for five selected persimmon cultivars as reported by Chen et al (2016). However, similar results for ascorbic acid of persimmon fruit (7.5 mg /100g fruit) was reported by Yaqub et al (2016). Beside, El Sheikha et al (2008) reported that, physalis fruits contained 39.68 mg/100g of ascorbic acid.…”

“…It remains to be determined whether other factors not measured at the sampling site, such as day/night growing temperature combinations, tree water intake, and degree of ripening at fruit harvest, also known to affect the accumulation of these compounds in red fruits, were determining factors influencing the yearly fluctuation in TPC and TF content observed in D. rekoi fruits. The major soluble phenols found in Diospyros fruits include phenolic acids, catechins, and hydrolyzed tannins, whereas rutin is an abundant flavonoid . In this respect, 11‐methylgerberinol, a 4‐hydroxycoumarin also present in D. kaki , was found to be a discriminant phenolic metabolite in D. rekoi (Table ) …”

“…The detection of ursanes such as ursa‐12,18‐dien‐3‐ol, 11‐methylgerberinol, and cinnamyl acetate was congruent with their previous identification in fruits of D. kaki and D. blancoi . These compounds are known to contribute to the aroma and/or therapeutic value of Diospyros fruits …”
