Chemical Composition and Antioxidant Activity of Seeds of Different Cultivars of Mungbean

Abstract: Seeds of 4 cultivars (M-1, M-6, NM-92, and NM-98) of mungbean [Vigna radiata (L.) Wilczek] were investigated for proximate composition, antioxidant potential, fatty acids, tocopherols, and minerals profiles. Hexane-extracted seed oil content of the investigated cultivars of mungbeans ranged from 1.20% to 1.56%. Mungbean seeds were found to be a rich source of protein (20.97% to 31.32%). The contents of Fe, Cu, Mg, Na, K, Ca, and Zn were found to be 105.8 to 190.9, 4.8 to 6.3, 48.6 to 51.7, 382.6 to 562.7, 11.6… Show more

“…Cabrera et al (2003) reported that in leguminous grains the levels of microelements (in mg/100 g) ranged from 0.15-0.5 for Cu, 1.88-8.24 for Fe and 3.26-7.02 for Zn. Anwar et al (2007) Nuts are nutrient-dense foods with complex matrices rich in unsaturated fatty acids and other bioactive compounds, such as L-arginine, dietary fiber, minerals, tocopherols, phytosterols and polyphenols. By virtue of their unique composition, nuts are likely to beneficially impact heart health and reduce the incidence of diabetes.…”

“…The ratio between a-and c-tocopherol was 1:60. Mean ratios from 1:26 and 1:139 have been reported for hull-free mung been seeds (Anwar et al 2007) and the oil fraction of mung beans, respectively (Zia-Ul-Haq et al 2008). Although a slight increase of a-tocopherol was observed during sprouting, its total level remained low.…”

“…The amount of TP was determined following FolinCiocalteu reagent methods as described by Anwar et al [19]. Briefly, 0.5 mL of diluted extract solution mentioned in Section 2.6.1 (0.01 g/1.0 mL) was mixed with equal volume of Folin-Ciocalteu reagent and 7.5 mL deionized water.…”
