Characterization of Phytochemicals in Berry Fruit Wines Analyzed by Liquid Chromatography Coupled to Photodiode-Array Detection and Electrospray Ionization/Ion Trap Mass Spectrometry (LC-DAD-ESI-MSn) and Their Antioxidant and Antimicrobial Activity

Abstract: Fruits are a valuable source of phytochemicals. However, there is little detailed information about the compounds contained in fruit wines. In this study, wines from six different berries were analyzed using HPLC-DAD-ESI-MSn. About 150 compounds were identified, including anthocyanins (34), hydroxycinnamic acids (12) and flavonols (36). Some of the compounds were identified for the first time in berry wines. The blackberry wines were found to contain the largest number of bioactive compounds (59). Elderberry w… Show more

“…With regards to plasmalogen, although it has been reported to exist in animals, such as livestock, poultry, and seafood [ 10 , 17 ], the quantitative comparation in different animal foodstuffs have not yet been well studied. To date, liquid chromatography-tandem mass spectrometry (LC-MS/MS) has been widely applied in the analysis of food products, such as bioactive constituent discovery, food authentication and discrimination, quality control, and so on [ 16 , 18 , 19 , 20 ]. For the source exploration of plasmalogen, most of the studies focused on ethanolamine plasmalogen (PlsEtn) [ 10 , 21 ], while the other major type, choline plasmalogen (PlsCho), attracted less attention.…”

“…Glycerol emerged as the primary fermentation product in raspberry wines, as indicated by the findings of Czyzowska et al. (2020), where it reached a concentration of 5.41 g/L. Similarly, in two studies (Duarte, Dias, et al., 2010; Duarte, Dragone, et al., 2010), glycerol dominated as the main compound in five out of the eight raspberry wines, and in 11 out of the 16 raspberry wines, respectively, with concentrations ranging from 4.6 to 10.2 g/L.…”

Acidity, primarily attributed to citric acid (8.74 g/L), is also a crucial parameter in raspberry wine (Czyzowska et al., 2020; He et al., 2022; Jiang et al., 2022). The total polyphenol contents reported by Mitic et al.…”

“…r High-performance liquid chromatography analysis of sea buckthorn fruit extract Chromatographic separation of phenolic compounds of the sea buckthorn fruit extract was carried out according to Czyżowska et al [2020] on a Spherisorb ODS2 column (250×4.6 mm, 5 µm packing) (Waters, Milford, MA, USA). The mobile phase consisted of 5% formic acid (solvent A) and 95% acetonitrile (solvent B).…”
