Characterization of meat quality traits, fatty acids and volatile compounds in Hu and Tan sheep

Abstract: Sheep breed has a major influence on characteristics of meat quality and intramuscular fat (IMF), however, studies into the relationship between sheep breed and meat quality traits rarely consider the large variation in IMF within breed. In this study, groups of 176 Hu and 76 Tan male sheep were established, weaned at 56 days old, with similar weights, and representative samples were selected based on the distribution of IMF in each population, to investigate variations in meat quality, IMF and volatile compou… Show more

“…Compared to other sheep breeds, Hu sheep mature earlier, produce more lambs per litter, and are in heat throughout the year, making them an advantageous breed for overall lamb production. In addition, the intramuscular fat and fatty acid contents of lake lamb are relatively high [ 13 ], which may lead to their involvement in enhanced lipid metabolism during the post-slaughter maturation process, thereby affecting the flavor of the meat. Therefore, it is necessary to measure the changes in basic meat quality and metabolites during the meat’s maturation.…”

“…The Hu sheep are highly valued by farmers for their high fertility and continuous estrus cycles and have the advantages of high temperature and high humidity resistance, strong adaptability, and multiple lambs per litter [ 2 ]. Hu sheep have a high slaughter rate and excellent meat quality, being rich in protein [ 3 ]. At the same time, they have a very broad prospect in the processing of lamb products and meat products [ 4 ].…”
