Characterization and Technological Potential of Underutilized Ancestral Andean Crop Flours from Ecuador

Abstract: Ancestral Andean crop flours (ACF) from Ecuador such as camote (Ipomea Batatas), oca (Oxalis tuberosa), achira (Canna indica), mashua (Tropaeolum tuberosum), white arracacha (Arracacia xanthorrhiza), taro (Colocasia esculenta) and tarwi (Lupinus mutabilis sweet) were characterized in terms of physico-chemical and techno-functional properties in order to identify their potential as new alternative ingredients in food products. Flour from camote, oca, achira and arracacha showed a low protein content (<5%), m… Show more

“…This means that x w variations are influenced by root composition. The corn grits and Tt root have a higher amount of protein (8.61 ± 0.01% [ 39 ] and 9.12 ± 0.13% [ 10 ], respectively) compared to Ot root (1.63 ± 0.07%) ( Table 1 ) [ 10 ]. This could indicate that protein plays an essential role during extrusion.…”

“…This could explain why the Ot samples showed lower SEI values compared to the other samples. The Ot roots ( Oxalis tuberosa Molina) had lower fiber values (5.33 ± 0.05%) [ 10 ] compared to root Ci (11.51 ± 0.05%) and IbP (11.19 ± 0.11%) ( Table 1 ) [ 10 ].…”

“…The Andean region in South America comprises the territories of Colombia, Ecuador, Perú, and Bolivia, which have been recognized for their biodiversity and plant richness. These natural regions embrace a germplasm collection of fruits, vegetables, tubers, roots, cereals, and pseudocereals known as “Andean crops.” These crops are grown mainly in marginal areas (in contrast to extensive crops in modern agriculture) and are characterized by their nutritional content and potential application of bioactive compounds (Salazar et al., 2021 ).…”
