Abstract: The physical characteristics of fermented products from restaurant waste food with BIOMS probiotic at a dose of 8% which was incubated for 7 days were investigated in order to study effect of fermentation to the physical characteristic of biomaterial and its effect to enzyme activity of Clarias sp.
