Changes of microbial diversity and volatile compounds in edible and deteriorated Qingke barley fresh noodles stored at 25 °C

Abstract: Summary Microbial diversity and volatile compounds in Qingke barley fresh noodles (QBFN) with different storage time at 25 ± 1 °C were investigated. The results showed that Pseudomonas, Pantoea, Erwinia and Alternaria, Pyrenophora, Penicillium were the dominant microorganisms in edible QBFN (stored for 0 and 12 h), while Pantoea, Erwinia, Bacillus and Penicillium, Aspergillus were the dominant spoilage microorganisms in deteriorated QBFN (stored for 18 h). The edible QBFN have high concentration of aldehydes (… Show more

“…These compounds were found in a wide variety of foods, i.e., those that have been detected as key food odorants in more than 25% of the 227 food samples investigated [ 24 ]. These are also important intermediates to other flavor compounds, including thiophenes, furan thiols, and other sulfur compounds [ 25 , 26 , 27 , 28 ].…”

“…In particular, aniline was the molecule that described the system, while benzeneamine, N-ethyl-, benzeneacetaldehyde and 3-hexen-1-ol, (Z)- were descriptors of LS leaves, either from aquaponic or hydroponic systems. Benzeneacetaldehyde is a secondary VOCs considered to be the product of lipid oxidation, which results in off-odors [ 25 ]. This molecule derives from acetaldehyde as a result of anaerobic metabolism, which increases under stress conditions.…”

“…Water status was measured by lowfield nuclear magnetic resonance (LF-NMR) (Model NMI-20; Niumag). The parameter setting followed Tuersuntuoheti et al (2019) with some modification. Where the transverse relaxation time T 2 was determined using a CPMG pulse sequence.…”

“…The higher content of water and a w at the start were suitable for microbial replication. The decreasing of moisture content and a w may result from the migration of water from QFN to air, the increased value after 24 h may be resulted from microbial reproduction and acceleration of growth rate (Tuersuntuoheti et al, 2019). the distribution, composition, and percentage of different water status in QFN at different storage times.…”
