Changes in the Flavor Profile of Ground Beef Resulting from the Application of Antimicrobial Interventions

Abstract: The objective of this study was to characterize flavor, fatty acid composition, and volatile compounds of beef treated with common antimicrobial interventions in beef processing facilities.
