Carotenoid:β-cyclodextrin stability is independent of pigment structure

Abstract: Carotenoids refer to a wide class of lipophilic pigments synthesized by plants, exert photoprotective and antioxidant properties that are lost upon carotenoid degradation. Their inclusion into hydrophilic host-molecules could improve their stability.
