Bioactive compounds and enzymatic activity in minimally processed eggplant packedunderactive modified atmosphere

Abstract: The study aimed to assess bioactive compounds and polyphenoloxidase activity of minimally processed eggplants stored in different atmospheres. Eggplants (Solanum melongena L.; cv. Ciça) were minimally processed (MP), sanitized and treated with a 2% citric acid solution. They were packed in plastic containers (vacuum) of nylon + transparent polyethylene and submitted to modified atmospheres with the following concentrations of gases: control (atmospheric air), vacuum, 4% O2 + 5% CO2,4% O2 + 6% CO2, 4% O2 + 7% C… Show more

“…Eggplant (Solanum melongena L.) or also known as garden egg or brinjal, is an important warm weather crop, mainly grown in the tropical and subtropical regions of the world. It is native to India, with China and Japan known as secondary canters of its origin (Gisbert et al, 2016;Mariano-Nasser et al, 2019;Page et al, 2019;Ullio, 2003). About 54 million tons of eggplants were produced in 2018, with 93.7% in Asia, 3.8% in Africa, 1.8% in Europe and 0.7% in America (FAO, 2018).…”

“…One of the main limitations imposed on agriculture in the semi-arid region is related to low water availability due to low rainfall and high annual evapotranspiration [4]. In the eggplant crop, water deficits can negatively affect characteristics such as mineral composition, leaf water potential, photosynthesis and fruit yield [5,6]. Thus, strategies that minimize the deleterious effects and/or increase the efficiency of water use is being studied [7,8].…”
