“…It is of interest in this connection that the degree of denaturation of the substrates also seems to influence the course of the activity-pH curves (LINDERSTR~M-LANG et al 1938;BOVEY & YANARI 1960). The fact that gastric juice often possesses considerable proteolytic activity at pH values between 3 and 5 (and sometimes even shows maximum activity there) has caused discussions on the possible occurrence in gastric juice of a cathepsin besides pepsin*) (BOVEY & YANARI 1960;BUCHS 1956;NORPOTH et al 1953;SCHLAMOWITZ &PETERSON 1961).
