“…Among all the above quality attributes, the turbidity of filtered beer is that controlling the performance of the beer clarification process (Cimini and Moresi ). In fact, a certain reduction in aromatic, foaming, coloring, and extract‐forming compounds is generally observed, this being due to their adsorption onto the membrane or filter‐aids.…”

“…However, the average permeation flux was absolutely incomparable with that achievable with conventional powder filters. Such a membrane was previously regarded as optimal (Cimini and Moresi ), especially if the β‐glucan content of precentrifuged rough beer had been enzymatically minimized (Cimini and others ). Nevertheless, even if the average permeation flux (128 ± 33 L/m 2 /h) in the ceramic 0.8‐μm HF membrane module (Cimini and Moresi ) was greater than that (80 to 100 L/m 2 /h) claimed by Heineken/Norit Membrane Technology (Noordman and others ; Buttrick , ), it was from about one‐fifth to one‐half of the average filtration rate achieved in the classic technology using kieselguhr for the primary filtration of rough beer.…”
